Zhenjiang is famous for its delicacies, which is characterized with Huai-yang Cuisine, a combination of flavors in north and south China. The local specialties of the city are saucy, reeves shad and long-snout catfish in Yangtze River, cooked silver carp’s head, pork ball, as well as crystal pork, pot-cover noodles, and fragrant vinegar, which has a history of over 160 years with the feature of “dark color, sweet scent, sour taste and full body”, ever won many gold medals in various international fairs, whose brewing craft is listed among the first batch of national non-material cultural heritages publicized by the State Council.
